MY NAME IS CECCHINI ……DARIO CECCHINI.


For the last 40 years I have been a butcher, seeking to better myself in my art,

and to discover the best cutting and cooking methods for each piece of meat.

My goal is to respect the animal by using every part in the best way possible.


In my shop, where hospitality is sacred, you can buy beef, pork,

and when in season, lamb.
In my restaurants, where you will dine “in convivio” together with other guests,

you have the possibility to appreciate, I hope, the results of my search for quality.

Bone-in steaks must be reserved two days in advance

IMPORTANT: My philosophy is respect for the animal.

My job as a butcher is to use the whole animal well, and with responsibility. I do not ask my customers to cook only stews, soups and meatballs, I will take care of that, but nor can I sell in a single request, only Bistecche Fiorentine, which make up less than 10% of the total weight of the animal. Therefore, in filling an order for steaks, please expect that I will sell them in the proportion of one T-bone or Bone-in Rib-eye and one Bistecca Panzanese. I use this same concept at my restaurant “Officina della Bistecca” because I think it is correct and just.
