MY ROAST PORK

 
“Aristòs” is ancient Greek for “excellent”, “the best”. It is the main dish for every feast. My Arista is roasted in the oven with thyme, garlic, fennel pollen, rosemary, sea salt and black pepper. Cut into thick slices and serve as is, or perhaps with a plate of Tuscan beans and olive oil.
